  • Use a spoon to scale them. We cook all our gills this way. All the way up to a couple pounds. All you do is score them when you cook. There is a bunch of meat wasted fileting gills. And the crispy tail is the best part. My gdad would eat everyone else's fins!

  • Out here in California we fry the whole thing and make what i call " fish chicharon tacos " and the head and tail is the best ! Yummy! We lower our heat and fry extra well done......just shy of burning them, same thing goes for my Asian fishing buddy and my Mexican and Californios like myself, we smoke our crappies, carp, trout, catfish and oven bake our strippers bass, being married to a Chinese girl, she steams her fish then applies hot oil over the top and violla! All yummy! We even fry our fish like you folks in the south........it's all good!

  • He's probably feeding. When a gar feeds, they usually just sit on top or in the water and act like a piece of driftwood. That way bait fish and stuff looks swim up to it and not think it's a predator. When the fish swims past, it gets cachowed!!!!

DAMMIT BOY !!👍👍😁 Fillet that bad boy, set the fillets in a big bowl, put some Tony Catcheries Creole Seasoning, mustard to coat them up really good, add beer to cover, let it marinate for at least 3 hours or overnight !! Fire up your Cajun Fryer, and get the grease HOT !! That fried Gar is even better the next morning foe breakfast !!!
